Sweet-and-Sour Roast Chicken
- 1/2 c. packed light-brown sugar
- 2 tbsp. Thai fish sauce
- 2 tbsp. low-sodium soy sauce
- 2 tbsp. water
- 2 tsp. garlic paste
- 1 tsp. hot red chili sauce (like sriracha)
- 1/4 c. fresh lime juice
- 1 warm fully-cooked rotisserie chicken
- 3 mini seedless cucumbers
- 1/4 c. sliced red onion strips
- 1/4 tsp. kosher salt
- 1/4 tsp. Freshly ground pepper
- 1 head frisee
- 2 tbsp. julienned mint leaves
- 1 fresh red or green chile
- In a medium saucepan, whisk brown sugar, fish sauce, soy sauce, water,garlic paste, and chili sauce until combined.
- Bring mixture to a boil and simmer over medium heat until sauce boils and thickens, 3 to 5 minutes.
- Remove from heat and stir in 3 Tbsp of the lime juice.
- Brush half of the sweet-and-sour sauce over the flesh and skin sides of chicken pieces.
- Toss cucumbers, red onion, the remaining 1 tablespoon of the lime juice, salt, and pepper in a small bowl.
- Arrange frisee and dressed cucumbers on a platter.
- Place chicken pieces over greens and sprinkle with mint and sliced chile, if desired.
- Spoon remaining sauce over chicken or serve on the side.
