Cajun Crawfish Jambalaya Recipe

  1. Saute/fry in margarine the bell pepper, garlic, onion, and celery.
  2. Add in some of the crawfish fat for flavor.
  3. Cook for about 30 min over a low fire.
  4. Add in crawfish tails, green onions, 2 Tablespoons minced parsley, salt, pepper, cayenne pepper , and 4 c. of cooked rice.
  5. I sometimes add in a small can of stem and pcs mushrooms.
  6. Let this steam for about 5-10 min.
  7. Add in a little margarine or possibly water if too dry.
