E. W.'S Roast Possum With Sweet Potatoes Recipe

  1. Simmer possum till partially done, changing the stock a couple of times according to age and amount of wild taste.
  2. Add in a piece of red pepper in the final simmer.
  3. Place possum in roaster.
  4. Add in small amount of water.
  5. Sprinkle possum with flour and baste with fat, if necessary.
  6. (Usually fat on possum is sufficient.)
  7. Surround by small sweet potatoes and bake till possum and potatoes are browned.
  8. Cooking time, from 1 to 2 hrs at 350 degrees.
  9. Makes from six to eight servings.
