Re-Make Evangeline Rice With Peas
- 14 cup Brummel and Brown spread
- 14 cup onion, chopped
- 14 cup celery, chopped
- 1 slice turkey bacon, diced
- 2 cups green peas, see note in recipe
- 12 cup ham, diced
- 1 cup brown rice
- 2 14 cups de-fatted chicken stock
- 14 teaspoon pepper
- 1 tablespoon parmesan cheese, grated
- In a large pot, melt margarine, add onions, celery, and bacon and saute for 5 minutes.
- Add peas - note: if using frozen peas thaw and add 5 minutes before rice finishes cooking.
- Add ham and cook another 5 minutes.
- Add rice, cook for 3 minutes, stirring continually.
- Add chicken stock,and pepper,bring to a boil.
- Cover and cook over low heat for 25 minutes.
- Check to see if rice is cooked through, if it is, stir in Parmesan Cheese and serve hot.
