Brown Rice and Apricot Pilaf
- 2 cups cooked brown rice
- 2 chopped scallions
- 2 chopped celery stalk
- Olive oil
- 6 chopped dried apricots
- Steam or cook brown rice for 45 minutes following package directions.
- Chop scallions and celery, saute in olive oil until tender.
- Add chopped apricots and scallion/celery mix to brown rice.
- Serve.
