Brown Rice and Apricot Pilaf

  1. Steam or cook brown rice for 45 minutes following package directions.
  2. Chop scallions and celery, saute in olive oil until tender.
  3. Add chopped apricots and scallion/celery mix to brown rice.
  4. Serve.
