Mexican Pocket Pitas Recipe
- 1/2 pound grnd turkey, cooked & liquid removed
- 1/2 c. minced onion
- 1 (16 ounce.) can Ranch pinto beans, undrained
- 1/2 c. salsa or possibly picante sauce
- 3 whole wheat pita pockets, halved
- 2 c. shredded lettuce
- 1 c. minced tomato
- 1 c. grated Alpine-lace nonfat Cheddar cheese
- 1 pkg. taco seasoning
- Brown turkey and onion about 3-4 min in microwave; drain.
- Add in taco seasoning, beans and salsa and heat.
- Spoon mix into each pita pocket.
- Add in lettuce, tomato and cheese.
- Use lite lowfat sour cream or possibly Mock lowfat sour cream if you like.
- Calories 208.
