Roasted Veggie Sammy

  1. Heat oven to 400 degrees F.
  2. Make 2 or 3 small cuts in each short end of red pepper; place on baking sheet sprayed with cooking spray, then press pepper to flatten.
  3. Add remaining vegetables, spreading to form single layer on prepared pan.
  4. Sprinkle with black pepper.
  5. Bake 5 to 6 min.
  6. or until vegetables are crisp-tender.
  7. Meanwhile, combine cream cheese spread, spinach and artichokes.
  8. Spread cut sides of focaccia with cream cheese mixture.
  9. Fill with roasted vegetables to make 2 sandwiches.
