Boom Booms Chicken Recipe
- 1/2 c. vegetable oil (8 Tbsp., divided)
- 3 lrg tomatoes, cut up into 8 to 10 pcs
- 1 med onion, thinly sliced
- 1 x green bell pepper, cut into pcs
- 1/3 c. minced green onion
- 1/4 c. minced celery Dash dry thyme Dash grnd nutmeg Dash garlic pwdr Dash Italian seasoning Dash dry rosemary Salt and black pepper to taste About 1 1/2 pounds boneless chicken breasts, halved All-purpose flour to coat chicken
- 2 x plaintains, peeled, sliced lengthwise and cut into halves Cooked basmati rice
- Add in 2 Tbsp.
- of the oil to a large skillet.
- Over medium heat, cook the tomatoes, onion, green pepper, green onion, celery, herbs and spices, and salt and pepper till the vegetables are soft and reduced into a sauce, about half an hour.
- Meanwhile, in large bowl, coat the chicken in flour.
- In a separate skillet, heat the remaining 6 Tbsp.
- of the vegetable oil over medium heat, and fry the chicken pcs till golden.
- Remove the chicken from the oil, reserving the oil.
- Drain chicken on paper towels and add in chicken to the tomato-vegetable sauce and simmer 15 min.
- In the reserved oil, fry the plantains till golden; drain on paper towels.
- On a serving plate, arrange cooked rice, plantains and chicken.
- Pour sauce over the chicken and serve.
