Peach and Red-Onion Relish

  1. In a small bowl of ice water, soak onion 10 minutes; drain, blot dry, and return to bowl.
  2. Add peaches, honey, lemon juice, and cayenne; season with salt and pepper.
  3. Let stand 15 minutes before serving.
  4. (Relish can be refrigerated, covered, up to 1 day.
  5. Bring to room temperature before serving.)
