Superb Old-Fashioned Matcha Doughnuts

  1. Combine all of the ingredients marked with a and sift.
  2. Place the butter in a bowl and whip with a whisk.
  3. Then, add the sugar and mix together thoroughly.
  4. Add the egg and milk, and whisk.
  5. Add the Step 1 dry ingredients to Step 2, and gently fold together to combine.
  6. The wet ingredients should be evenly distributed throughout the dry ones, so that the mixture as a whole has an even, moist consistency.
  7. Gather together into a ball and rest in the refrigerator for 1 hour.
  8. Remove from the refrigerator, and roll out to 8 mm thick.
  9. Use a cookie cutter to cut out shapes, and then deep-fry in oil at 335F (170C) to 350F (180C).
  10. When you bite into the finished doughnuts, the inside should be bright green.
