Hemp Seed and Avocado Sandwich

  1. In a medium sized bowl mash avocados with lemon juice, sea salt and black pepper.
  2. Add the jalapeno and cilantro or Mexican seasoning and mix to combine.
  3. Toast the hemp seed bread as desired.
  4. Spread lemon hummus on one side of each toasted slice of hemp bread.
  5. Spread the avocado goodness two of the slices then top that with roasted red pepper, then tomatoes, then arugula.
  6. Lay a second bread slice on top.
