Kirghiz Baked Beef
- 2 lb Flank steak, Ch beef, flank steak (london broil) chopped into 1/2 inch pieces
- 1 each onions chopped
- 1 each green bell peppers chopped
- 2 tablespoons olive oil
- 1 cup yogurt, plain
- 2 large eggs
- 2 each apples diced
- 1 cup apricots dried, chopped
- 1/2 cup raisins, seedless
- 1/2 cup prunes dried, pitted, chopped
- 2 tablespoons curry powder
- 1 teaspoon salt
- 2 teaspoons black pepper
- Saute onion and green pepper in olive oil in large heavy skillet until onion is transparent.
- Add chopped beef and brown lightly.
- Pour off drippings.
- Add eggs, apple, apricots, curry powder, salt and pepper to beef.
- Add yogurt and mix well.
- Place in a large, deep casserole and bake in a 350F (180C).
- for 45 minutes.
