Muskrat Meat Loaf
- 1 1/2 lb. ground muskrat
- 2 eggs, beaten
- 1/8 c. dry crumbs
- 1 c. evaporated milk
- 1/4 onion, minced or grated
- 1/4 tsp. thyme
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 tsp. Worcestershire sauce
- 1 (8 oz.) pkg. cream cheese
- 1 c. (4 oz.) grated smoked Cheddar cheese
- 1/3 c. beer
- 1 Tbsp. chopped chives
- 1 tsp. horseradish
- 1/2 tsp. dry mustard
- dash of cayenne pepper
- 1/3 c. butter
- 1/2 tsp. onion salt
- 1/4 tsp. thyme
- 1/4 tsp. parsley
- 1 lb. fresh broccoli
- 1 small head cauliflower
- 2 medium zucchini
- 2 medium tomatoes, cut into wedges
- 1/4 c. Parmesan cheese
- Combine butter, onion salt, thyme and parsley.
- In a cup measure or bowl (glass), microwave on High (100%) for 45 seconds to 1 minute.
- Set aside.
