1st Place Banana Nut Bread
- 1 teaspoon fresh lemon juice
- 12 cup milk
- 1 cup sweet butter, softened
- 2 12 cups sugar
- 2 teaspoons vanilla extract
- 4 eggs, beaten
- 3 12 cups unsifted unbleached flour
- 2 teaspoons baking soda
- 14 teaspoon salt
- 2 12 cups mashed very ripe bananas
- 2 cups chopped walnuts
- Preheat oven to 350 degrees.
- Butter 2 loaf pans.
- Pour the lemon juice into the milk and stir until the milk is curdled.
- Set aside.
- Beat together the butter, sugar and vanilla until creamy.
- Add the eggs, mixing thoroughly.
- Sift together the flour, baking soda and salt.
- Add this to the butter-sugar mixture alternately with the curdled milk.
- Stir in the bananas and nuts.
- Pour the batter into the prepared loaf pans and bake for 1 hour and 10 minutes, or until a knife inserted into the center comes out clean.
