Blueberry Muffins (Sconset Cafe) Recipe
- 3 1/4 c. flour
- 1 1/2 c. sugar
- 1 tsp salt
- 4 tsp baking pwdr
- 1 tsp baking soda
- 1 Tbsp. lemon rind grated
- 2 x Large eggs
- 2 c. buttermilk
- 1/2 c. oil
- 1 c. frzn blueberries
- Sift the flour, sugar, salt, baking pwdr, baking soda and lemon rind into a large bowl.
- Set aside.
- In a separate bowl whisk Large eggs, buttermilk and oil till combined.
- Add in this mix to the dry ingredients and stir till the batter is just mixed.
- Gently mix in the blueberries and distribute proportionately.
- it is essential which you don't stir the batter too much or possibly the muffins won't be tender.
- Spoon the batter into a paper-lined muffin tin, filling each c. to the brim.
- Sprinkle each muffin with 1/2 tsp.
- granulated sugar, if you like.
- Bake at 375F for 20 min or possibly till brown.
- Cold in the pans for 10 min.
- Then remove form pan and finish cooling on a wire rack.
