Baked Vidalia Onions with Morel Butter

  1. Preheat oven to 450 degrees F.
  2. Tightly wrap onions in 2-layers of foil.
  3. Place on a cookie sheet and roast in the oven for 35 minutes.
  4. In a large skillet, heat oil.
  5. Saute morels until cooked and add a splash of wine.
  6. In a medium bowl, add butter and fold in cooked morels.
  7. Place butter onto waxed paper and form into a log.
  8. Wrap and place in refrigerator until ready to serve.
  9. When onions are ready, use a paring knife to cut a triangular hole at the top of the onion.
  10. Place a pat of butter into each hole and serve.
