Mixed Dahl
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 hot red chili pepper, finely chopped
- 2 teaspoons grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 12 teaspoon turmeric
- 400 g diced tomatoes
- 1 14 cups vegetable stock
- 14 cup yellow split peas, soaked 30 mins, rinsed & drained
- 14 cup red lentil, rinsed & drained
- 14 cup brown lentils, rinsed & drained
- 14 cup chopped fresh cilantro
- Heat oil in large saucepan over high heat.
- Saute garlic, chilli and ginger for 3-4 mins until onions are tender.
- Add the cumin,ground coriander and tumeric.
- Cook, stirring for 1 minute.
- Mix in the tomatoes, stock, split peas and lentils.
- Bring to boil.
- Reduce heat & simmer, covered, about 30 mins until dhal is tender.
- Stir half the fresh cilantro through.
- Sprinkle with the remaining coriander, to garnish.
