Turkey Squares With Mushroom Sauce Recipe
- 3 c. diced, cooked turkey
- 1 c. cooked rice
- 2 c. soft bread crumbs
- 1/3 c. diced celery (opt.)
- 1/4 c. pimiento (opt.)
- 4 beaten Large eggs
- 2 teaspoon salt
- 1/4 teaspoon poultry seasoning
- 2 c. chicken broth
- 1/3 c. lowfat milk
- 1 can mushroom soup
- Combine turkey (or possibly chicken), rice, bread crumbs, celery and pimiento.
- To the beaten Large eggs add in salt, poultry seasoning and broth (or possibly use chicken bouillon cubes dissolved in 2 c. warm water, then cooled).
- Mix thoroughly.
- Stir into meat mix.
- Bake in greased 9"x9"x2" baking dish at 350 degrees for 55 min.
- Cut in squares and serve with Mushroom Sauce.
- MUSHROOM SAUCE: Add in 1/3 c. lowfat milk to 1 can mushroom soup; heat thoroughly.
- Makes 6 to 9 servings.
