Homemade Tofu from Soy Milk
- 400 grams Soy milk (additive-free)
- 2 tsp Nigari
- Put the soy milk in a pot and heat until it's about 80C.
- Once warmed, turn off the heat and and slowly mix in the nigari a little at a time, being careful not to let it foam.
- If you slowly mix in the nigari, there will be a lot of lumps.
- Once it gets to this state, let it sit for about 20 minutes.
- Place some gauze on top of a strainer and strain the lumpy soy milk.
- Squeeze the lumps over the gauze, put a light weight on top, and let sit for 20 minutes (to drain).
- Let sit in cold water for 30 minutes (to remove the excess nigari).
- This time, I used this brand of nigari.
