Chex Caramel Crunch

  1. Put butter in a medium sized microwave safe bowl.
  2. Melt butter in the microwave (heat for 30 seconds at a time until melted).
  3. Add sugar and corn syrup.
  4. Bring to a boil in the microwave, which takes about two minutes.
  5. Then continue to boil for about two minutes, stirring occasionally.
  6. Remove from microwave and add baking soda and vanilla.
  7. In a large microwave safe bowl, combine crackers, Chex, and nuts.
  8. Pour sugar/syrup mixture over the cracker mixture and stir well.
  9. Microwave for 2-3 minutes.
  10. Spread the mixture onto 2 large cookie sheets and allow it to cool.
  11. When cool, break into bite sized pieces.
