Chicken Mole Recipe
- 2 1/2-3 pound chicken (fryer) brown & set aside
- 1 med. onion
- 1-2 cloves garlic
- 1-2 teaspoon chili pwdr
- 1/2 ounce. unsweetened (bitter) chocolate
- 1 sm. green pepper
- 2 (8 ounce.) cans tomato sauce
- 1 teaspoon salt
- Saute/fry minced onion, garlic and green pepper till clear, about 3-5 min on low.
- Add in tomato sauce, chili pwdr, salt and bitter chocolate.
- Stir to heat chocolate.
- Add in water to keep from burning, sauce should be thick, not runny.
- Place chicken pcs in sauce and cover.
- Simmer 30 min, stirring occasionally and adding liquid if necessary.
- Serve over noodles.
