Grilled Escolar with a Saute of Fresh Asparagus, Baby Morels and Currant Tomatoes

  1. Preheat the grill.
  2. Season the fillets with 1 tablespoon of the olive oil, salt and white pepper and set aside.
  3. Preheat the fryer.
  4. Fry the potatoes until golden brown, about 3 minutes.
  5. Remove the potatoes and drain on paper towels.
  6. Season with salt and set aside.
  7. Place the fillets on the grill and cook for 3 to 4 minutes on each side.
  8. In a large saute pan, over medium heat, add 2 tablespoons of olive oil.
  9. When the oil is hot, add the mushrooms.
  10. Season with salt and pepper.
  11. Saute until tender, about 2 minutes.
  12. Add the asparagus and tomatoes.
  13. Season with salt and pepper.
  14. Continue to saute for 1 minute.
  15. Add the potatoes.
  16. Bring to a simmer and remove from the heat.
  17. Stir in the parsley.
  18. To serve, spoon the mushroom/asparagus mixture in the center of each plate.
  19. Lay the fish on top of the vegetable mixture.
  20. Spoon some of the butter sauce over the fish.
  21. In a small mixing bowl, toss the herbs with the olive oil, salt and pepper.
  22. Pile the herbs in the center of each fillet.
