Gourmet Oatmeal Cookies
- 1 c. margarine or butter
- 1 c. packed brown sugar
- 1 c. sugar
- 2 eggs
- 3 Tbsp. milk
- 2 tsp. vanilla
- 2 1/2 c. 3 minute brand old fashion oatmeal
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 2 c. butterscotch chips
- 1 c. chopped pecans
- Preheat oven to 350u0b0.
- Beat margarine and sugars until creamy. Add eggs, milk and vanilla; mix well.
- Combine oats, flour, baking soda, baking powder and 1 teaspoon salt, if desired, in separate bowl.
- Add to margarine mixture; mix well.
- Stir in chips and pecans.
- Chill dough 1 hour.
- Drop by rounded teaspoonful onto ungreased cookie sheet.
- Bake for 10 to 12 minutes.
- Let stand 5 minutes before removing to racks to cool.
- Makes 5 dozen.
