Easy Cooking in One Pot - Silken Tofu with Mushroom Ankake Sauce
- 1 block Silken tofu
- 1 packet Enoki mushrooms
- 1 Green onions (chopped)
- 200 ml Water
- 2 tbsp Mentsuyu (3x concentrate)
- 2 tbsp Mirin
- 1/2 tsp Japanese dashi soup stock (granules)
- 2 tsp Katakuriko
- 2 tsp Water
- Remove the stems of the enoki mushrooms and cut it into 3 even lengths.
- Add the sauce ingredients and Step 1 enoki mushrooms into a pot and turn on the heat.
- Cut the silken tofu into your desired size and add to the pot.
- Simmer for a while.
- Thicken with the katakuriko slurry and turn off the heat.
- Serve in a bowl and garnish with green onions.
