Baigan Bharta
- 1 large eggplant
- 2 medium onion, chopped
- 2 medium tomatoes chopped
- 2 medium green chillies(chopped finely)
- 3/4 tsp turmeric powder
- 1/2 tsp ground cumin
- 1/2 tsp coriander powder
- 1/2 tsp red chilli powder(increase or reduce according to heat preference)
- 1 tsp salt(or to taste)
- 1 chopped coriander leaves to garnish
- 1 tbsp vegetable oil
- 1/2 tsp black mustard seeds
- Roast eggplant on the stove till the skin is totally charred and the eggplant is mostly cooked.
- Remove the eggplant in a bowl and cover it for 10-15 min
- Meanwhile heat oil in a pan, when hot add the mustard seeds.
- When mustard seeds start to splutter add the green chilled and the onions.cook the onions till they get golden in colour
- Now add turmeric,cumin,coriander powder,chilli powder and cook for a min
- Now add the tomatoes and cook till they are soft and totally cooked
- While the tomatoes are cooking remove the charred skin off the eggplant completely and mash the eggplant lightly with a fork
- When the tomatoes are cooked add the mashed eggplant and the salt and mix well
- Cover and cook on medium low heat for 5 min
- Garnish with coriander leaves and serve with chapatis,Nan or rice
