Make Your Own Hummus - Basic Recipe
- 1 teaspoon vegetable oil
- 1 (15 ounce) can chickpeas, preferably organic
- 12 cup onion, chopped
- 2 -4 garlic cloves, minced
- 1 teaspoon coriander
- 12 teaspoon curry powder (I used Penzey's Balti curry powder)
- 1 teaspoon cumin
- 18 teaspoon cayenne or 18 teaspoon red chili powder
- 1 tablespoon lemon juice (to taste)
- 14-12 cup fresh parsley or 14-12 cup fresh cilantro, chopped
- Saute the onions in the oil for about 5 minutes.
- Add minced garlic and spices and saute another 2 minutes or until fragrant.
- Be sure to keep stirring to avoid sticking or the garlic getting too dark.
- Drain the chickpeas, reserving their liquid.
- Add them to a blender or food processor with just enough liquid to blend.
- If using a blender, like I have, be patient, and keep scraping down the sides.
- Once chickpeas are somewhat smooth, add the sauteed onion, garlic and spice mixture from the stove and blend until combined.
- Scrape into a bowl and add lime/lemon juice if using, and fold in fresh parsley or cilantro.
- Serve with grilled pita or as a dip for fresh veggies.
