Sourdough Hotcake Recipe
- 1-2 Large eggs
- 1 tbsp. oil
- 1 teaspoon soda dissolved in 1 tbsp. water
- 1 teaspoon salt
- 1 tbsp. sugar
- Sourdough leftover from above recipe
- Beat with a fork and blend in all ingredients.
- Add in soda/water mix just before baking.
- Bake on a warm griddle.
- Turn once.
- For the next time you want to make sourdough hotcakes, take the starter from the refrigerator and bring to room temperature.
- Add in to it 1 1/2 c. flour and 1 1/2 c. water.
- This must be done the night before.
- Let it sit overnight.
- The next day, remove 1/2 c. from the bowl and return to refrigerator.
- Proceed with the rest of the mix to make hotcakes.
- Each time you want to use sourdough, take the starter from the refrigerator the night before, add in it to 1/2 c. less water and flour than your recipe calls for and let it sit overnight.
- Put 1/2 c. back into the refrigerator for next time.
