Vanilla Caramel Cocoa Holiday Cereal Treats

  1. Set up your workstation: put out all your decorations and toppings into bowls or on paper plates for easy access.
  2. Spray either a) a large gingerbread cookie pan b) a 9x13 inch casserole dish or c) two 12-cup muffin pans with cooking spray.
  3. Add the butter and marshmallows to a large microwave-safe bowl and microwave for 20 second intervals until the butter and marshmallows have melted.
  4. (Be sure to check in between each 20 second interval and stir to keep the marshmallows from overflowing).
  5. Remove bowl from the microwave and stir in cereal until well coated with marshmallow mixture.
  6. Press this mixture into your prepared pan(s).
  7. It will be warm and sticky, so you can either wear plastic gloves or use a piece of parchment paper to push/shape the cereal mixture so that it conforms to the pan you are using.
  8. Let this mixture cool in the pan until it is set and no longer warm to the touch, then remove, cut into portions if desired, and proceed with decorating!
  9. To decorate: Add white chocolate chips to a medium heavy-duty plastic bag and microwave for 10 second intervals, massaging between each 10 second session, until it is melted.
  10. Snip off a corner of the bag, then pipe onto the cooled cereal treats.
  11. Push/sprinkle any of the assorted decorations onto the still-warm white chocolate.
  12. Let chocolate set and then serve!
