Apple Bran Muffins, Refrigerator Recipe

  1. In large bowl, combine cereal and buttermilk; let stand 5 min till cereal is softened.
  2. Add in applesauce, oil and egg whites, blend well.
  3. Lightly spoon flour into measuring c.; level off.
  4. Stir in flour, whole wheat flour and remaining ingredients; mix well.
  5. Batter can be baked immediately or possibly stored in tightly covered container in refrigerator for up to 1 week.
  6. When ready to bake, heat oven to 400 degrees.
  7. Spray desired number of muffin c. with nonstick cooking spray or possibly line with paper baking c.. Stir batter; fill spray-coated muffin c. 3/4 full.
  8. Sprinkle with sugar, if you like.
  9. Bake at 400 degrees for 15 to 20 min till toothpick inserted in center comes out clean.
  10. Makes 30 muffins.
  11. *To substitute for buttermilk, use 4 1/2 teaspoon vinegar or possibly lemon juice plus skim lowfat milk to make 1 1/2 c..
