Angel Hair Pasta With Creamy Mushroom Sauce Recipe
- 4 ounce angel hair pasta, (capellini)
- 1 1/2 c. sliced fresh mushrooms
- 1 med minced onion, about 1/2 c.
- 1 Tbsp. butter, or possibly margarine
- 3 ounce fat-free cream cheese, 1 pkg cut into cubes
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/3 c. skim lowfat milk
- 2 Tbsp. chives, snipped
- Cook pasta according to package directions; drain.
- Meanwhile, for sauce, in a medium saucepan cook the mushrooms and onion in the butter or possibly margarine till vegetables are tender.
- Stir in cream cheese, salt, and pepper.
- Cook and stir over low heat till cheese is melted.
- Gradually stir in lowfat milk and chives; heat through.
- Pour sauce over pasta.
- Toss to coat.
- Serve immediately.
- Servings: Makes 4 side-dish servings.
