Sicilian Burgers
- 1 yellow red bell
- 1 red bell pepper
- 3/4 lb. ground pork
- 3/4 lb. hot or sweet Italian sausage
- 1 bulb fennel
- 2 oz. Gorgonzola cheese
- 4 squares focaccia
- 1/2 c. prepared pesto sauce
- 1/4 c. marinated sun-dried tomatoes
- Preheat grill to medium-hot.
- Grill peppers until blackened on all sides, turning occasionally, 10 to 15 minutes.
- Place peppers in a bowl, cover, and let stand until peppers are cool enough to handle.
- Remove skin, seeds, and ribs.
- Cut peppers into strips.
- Crumble pork and sausage into a bowl.
- Toss lightly to combine and shape into 4 (3/4-inch thick) burgers.
- Grill fennel slices 2 to 3 minutes per side, or until lightly browned and tender; set aside.
- Grill burgers 4 to 5 minutes per side, until browned and cooked through.
- Place cheese on burgers during the last 1 to 2 minutes of cooking time, with grill covered, to melt cheese.
- Grill focaccia cut sides down until toasted.
- Spread cut sides of focaccia with pesto sauce.
- Place burgers on bottom halves, and top with sun-dried tomatoes, fennel, and roasted peppers.
- Replace focaccia tops, pesto side down.
