Sicilian Burgers

  1. Preheat grill to medium-hot.
  2. Grill peppers until blackened on all sides, turning occasionally, 10 to 15 minutes.
  3. Place peppers in a bowl, cover, and let stand until peppers are cool enough to handle.
  4. Remove skin, seeds, and ribs.
  5. Cut peppers into strips.
  6. Crumble pork and sausage into a bowl.
  7. Toss lightly to combine and shape into 4 (3/4-inch thick) burgers.
  8. Grill fennel slices 2 to 3 minutes per side, or until lightly browned and tender; set aside.
  9. Grill burgers 4 to 5 minutes per side, until browned and cooked through.
  10. Place cheese on burgers during the last 1 to 2 minutes of cooking time, with grill covered, to melt cheese.
  11. Grill focaccia cut sides down until toasted.
  12. Spread cut sides of focaccia with pesto sauce.
  13. Place burgers on bottom halves, and top with sun-dried tomatoes, fennel, and roasted peppers.
  14. Replace focaccia tops, pesto side down.
