Sweet Potato Pie
- 4 large potatoes, baked
- 3/4 c. granulated sugar
- 1/2 c. firmly packed brown sugar
- 1/2 c. butter or margarine, cut up
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1 tsp. pumpkin pie spice
- 1 c. undiluted Carnation evaporated milk
- 1 tsp. vanilla
- 4 large eggs
- 1 unbaked (9-inch) pie crust
- Preheat oven to 375u0b0.
- Beat cooled mashed sweet potatoes with sugars in mixer bowl until smooth.
- Add butter, a few pieces at a time, beating until melted.
- Beat in salt, nutmeg and pumpkin pie spice.
- Gradually add milk and vanilla.
- Add eggs, one at a time, beating well after each addition.
- Spoon into pie crust.
- Bake 50 to 60 minutes, until toothpick inserted into center comes out clean.
- Cool on wire rack.
