Macadamia Chocolate Muffins Recipe
- 2 c. flour
- 1 tbsp. baking pwdr
- 1/3 c. shortening
- 3/4 c. minced macadamia nuts, divided
- 1 egg, beaten lightly
- 1/3 c. sugar
- 1 teaspoon salt
- 1/2 c. semi-sweet chocolate chips
- 1 c. lowfat milk
- 1 teaspoon dark rum
- In bowl sift together flour, sugar, baking pwdr and salt.
- Cut in shortening till mix resembles coarse meal; stir in chocolate chips and 1/2 c. of macadamia nuts.
- In a small bowl combine egg, lowfat milk and rum; add in this mix to the flour mix.
- Stir batter till it is just combined.
- Divide the batter among 12 buttered or possibly paper lined muffin tins.
- Sprinkle tops with the remaining 1/4 c. macadamia nuts and bake for 25 min in preheated 400 degree oven.
- Let muffins cold in the tins for 5 min then turn them out onto a rack.
- Yield 12 muffins.
