Macadamia Chocolate Muffins Recipe

  1. In bowl sift together flour, sugar, baking pwdr and salt.
  2. Cut in shortening till mix resembles coarse meal; stir in chocolate chips and 1/2 c. of macadamia nuts.
  3. In a small bowl combine egg, lowfat milk and rum; add in this mix to the flour mix.
  4. Stir batter till it is just combined.
  5. Divide the batter among 12 buttered or possibly paper lined muffin tins.
  6. Sprinkle tops with the remaining 1/4 c. macadamia nuts and bake for 25 min in preheated 400 degree oven.
  7. Let muffins cold in the tins for 5 min then turn them out onto a rack.
  8. Yield 12 muffins.
