Refried Black Bean Burritos
- 2 cans (15 1/2 Oz. Size) Black Beans
- 1/4 Green Pepper, Left Whole
- 1 teaspoon Minced Garlic
- 1 teaspoon Ground Cumin
- 1/2 teaspoons Black Pepper
- 4 whole Flour Tortilla Shells
- 1 cup Shredded Cheese
- Mix beans, pepper, garlic, cumin, and black pepper together in a saucepan.
- Bring to a slow boil and turn the heat down very low.
- Let simmer for approximately 20 minutes.
- Stir to keep the mixture from burning and sticking to bottom of the pain.
- Discard green pepper before serving (this was used strictly for flavoring purposes).
- Warm tortillas in microwave for a few seconds and divide the beans evenly among the four tortillas.
- Top with cheese.
- Enjoy!
