Balsamic Chicken Recipe
- 1/2 c. White wine, or possibly apple juice
- 1/2 c. Chicken broth
- 1 Tbsp. Minced fresh thyme, or possibly 19 ounce can rinsed
- 1/2 tsp Dry thyme
- 2 Tbsp. Lemon juice
- 2 Tbsp. Balsamic vinegar
- 2 tsp Grated lemon rind
- 1 tsp Paprika
- 1/2 tsp Salt
- 1/4 tsp Pepper
- 6 x Boned and skinned chicken breast halves, about 1 1/2 lbs
- Mix all ingredients except chicken thighs in shallow glass or possibly plastic dish.
- Add in chicken; turn to coat with marinade.
- Cover and chill at least 2 hrs
- Place chicken and marinade in 10-inch nonstick skillet.
- Heat to boiling; reduce heat.
- Cover and simmer 15 to 20 min or possibly till juices of chicken run clear.
- Remove chicken; keep hot.
- Heat marinade to boiling.
- Boil about 6 min or possibly till liquid is reduced by half.
- Pour over chicken.
