Roasted Red Pepper Potatoes

• 14 cup olive oil
• 4 white potatoes or 4 sweet potatoes, peeled & chunked
• 2 tablespoons crushed red pepper flakes
• salt
• pepper (California Pepper)

1. Coat 8" square pan with olive oil and throw in pan all ingredients.
2. Toss till potatoes are coated.
3. Bake 30 minutes at 400 degrees.
