Southern Buttermilk Biscuits
- 2 cup flour
- 1/4 tsp baking soda
- 1 tbsp baking powder
- 1 tsp salt
- 6 tbsp very cold butter
- 1 cup cold buttermilk
- Preheat oven to 450F
- Combine dry ingredients in food processor.
- Cut butter into chunks and pulse processor until it resembles course meal.
- Add buttermilk and mix until just combined.
- Dough will be very wet.
- If you don't keep fresh buttermilk around, buy the powdered buttermilk and keep it in your fridge.
- It keeps a lot longer.
- Just follow the directions on the container.
- Turn the dough out onto a floured board.
- Gently pat (do not roll) the dough until it's 1/2 inch thick.
- Fold dough over about 5 times and gently press the dough down till it's 1 inch thick.
- Use a cutter to cut out biscuits.
- Gently knead scraps together to make a few more.
- Place biscuits on a cookie sheet and bake 10-12 minutes until golden brown.
- Do not overbake!
