City Chicken
- 1 pound pork stew meat very lean
- 1 pound stewing beef very lean
- 23 cup crackers, saltine crushed
- 1 1/2 teaspoons salt
- 1 teaspoon paprika
- 3/4 teaspoon poultry seasoning
- 1 each eggs slightly beaten
- 2 tablespoons milk
- 1 x vegetable oil
- 1 can chicken broth, low salt
- Heat oven to 350F (180C).
- Combine crumbs, salt, paprika, and poultry seasoning in a bowl.
- Combine egg and milk in another bowl.
- Dip meat in egg mixture, then in crumbs, Brown slowly on all sides in hot oil.
- Pour chicken broth over all.
- Cover and bake for 30 minutes; uncover and bake 30 minutes more.
