Company Fried Chicken
- 20 to 24 pieces chicken (breast, thigh and leg best)
- 1/3 c. vegetable oil
- 1/3 c margarine, melted (do not use low-fat kind)
- 1 c. flour
- 1 tsp. salt
- 2 tsp. paprika
- 1 tsp. white pepper
- 1 tsp. dried marjoram
- 1 tsp. garlic salt (optional)
- Rinse and dry each piece of chicken.
- Mix oil and margarine. Place oil and margarine mixture in a large, high-sided cookie sheet or jelly roll pan.
- In a large plastic storage bag, mix flour, salt, paprika, white pepper and dried marjoram.
- One at a time, dip chicken pieces in the oil mixture, then shake it in the flour mixture and place on a paper towel.
- Repeat this process until all chicken is coated.
- Place chicken pieces skin side up on cookie sheet containing any remaining oil mix.
- Bake at 375u0b0 for 45 minutes.
- Turn the chicken over and bake an additional 15 minutes.
