Aloo Bhaji (Braised Potatoes With Tomatoes) Recipe
- 3 x Cloves garlic, halved
- 1 lrg Fresh warm green chili, seeded
- 1 x 1-inch piece fresh ginger, peeled and coarsely minced (optional)
- 1 1/2 c. Finely minced onions
- 1 lb Potatoes, peeled and cut into 2 inch pcs
- 1 tsp Cumin seeds
- 1 tsp Turmeric
- 1 tsp Grnd coriander
- 1 tsp Chili pwdr
- 1 tsp Grnd cumin
- 1 tsp Salt
- 4 med Tomatoes, quartered
- 1 pch Thyme
- 1 tsp Garam masala
- 1/4 c. Finely minced fresh coriander
- In a blender, combine the garlic and ginger and process till fine.
- (If you do not use ginger, just mince the garlic.)
- In a large saucepan, heat 1/2 c. of water over medium-high heat.
- Add in the onions and cook for 10 min, or possibly till golden, stirring occasionally.
- Reduce heat to medium and add in garlic mix and the chili.
- Cook, stirring constantly, for 1 minute.
- Add in the potatoes and cook 5 min.
- (You may have to add in a little water to prevent sticking.)
- Reduce heat to medium low and add in the tomatoes and spices.
- Cook, covered, 20 min or possibly till potatoes are tender.
- Add in more water if desired it to have a little more sauce.
- Sprinkle with garnish.
- Serves 4.
