Mock (Zucchini) Apple Pie

• 4 cups zucchini peeled, seeded, sliced 1/8 inch thick
• 3/4 cup sugar
• 2 tablespoons tapioca
• 5 tablespoons lemon juice
• 1/2 teaspoon salt
• 2 teaspoons cinnamon
• 1 teaspoon nutmeg
• 2 tablespoons cornstarch
• 1/2 cup raisins, seedless
• 1/2 cup margarine softened
• 1/2 cup sugar
• 1/2 cup flour, all-purpose

1. Mix all Pie ingredients together and place in a deep dish unbaked pie shell.
2. Combine the Topping ingredients and pour on top of pie.
3. Bake at 375~ for one hour.
4. Dot top of pie with margarine.
