Elegant Pan-Broiled Filet

  1. Heat electric skillet or frying pan on high.
  2. Melt butter or oil.
  3. Cook filets 3-4 minutes on each side for medium rare, or slighly longer for more doneness.
  4. Sprinkle lightly with salt & pepper after turning.
  5. Remove meat from pan & pour off MOST of fat.
  6. Turn heat to medium & cook onions & parsley till softened.
  7. Pour in beef broth & wine.
  8. Cook over high heat until about 1/3 cup liquid remains.
  9. Pour over filets on a warm platter.
