Mini Veggie sushi

  1. Peel the cucumber on 2 sides.
  2. Using a peeler, cut the cucumber in 8 lengthwise slices, each about 1/8" thick.
  3. The peel should border the long sides of the slices (it makes for an appealing contrast).
  4. Cut each length into 3 pieces.
  5. Put a small amount of grated carrot at the short end of each cucumber piece.
  6. Top with a small spoonful of cream cheese and press in a few raisins.
  7. Carefully roll up the cucumber making sure the filling stays inside.
  8. Tie each roll with chives (or alternately just put a toothpick through each piece to hold together).
