Banana Bran Muffins
- 4 medium bananas very ripe
- 1 cup whole wheat flour
- 1 cup bran unprocessed
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup yogurt, low-fat
- 2 each egg whites
- 1/4 cup brown sugar
- 1/2 teaspoon cinnamon (or more)
- Liquify bananas in a blender or food processor and add the yogurt and egg whites.
- Mix the dry ingredients, then add the liquid.
- Mix just until moistened.
- Spoon into sprayed (or non-stick) muffin tins.
- Bake in a preheated 400F (200C) oven for about 25 minutes.
- (Use the toothpick test.)
- Makes 12-14.
