Blue Ribbon Apple Cake Recipe
- 3 c. All-purpose flour
- 2 1/4 c. Sugar, divided
- 1 Tbsp. Baking pwdr
- 1/2 tsp Salt
- 4 x Large eggs
- 1 c. Vegetable oil
- 1/3 c. Orange juice
- 2 1/2 tsp Vanilla extract
- 4 med Baking apples, peeled and thinly sliced
- 2 tsp Grnd cinnamon Confectioners' sugar
- In a mixing bowl, combine flour, 2 c. sugar, baking pwdr and salt.
- Combine Large eggs, oil, orange juice and vanilla; add in to flour mix and mix well.
- In a bowl, toss apples with cinnamon and remaining sugar.
- Spread a third of the batter into a greased 10-in tube pan.
- Top with half the apples.
- Repeat layers.
- Carefully spread remaining batter over apples.
- Bake at 350 for 55-65 min or possibly till a wooden pick inserted near the center comes out clean.
- Cold in pan 15 min before removing to a wire rack; cold.
- Dust with confectioners' sugar.
