Blintz Souffle
- 1 dozen blintzes
- 6 large eggs
- 1 12 cups sour cream
- 14 cup sugar
- 1 tablespoon vanilla
- 14 cup butter, melted
- 14 teaspoon cinnamon
- Coat blintzes on both sides with butter.
- Sprinkle with cinnamon.
- Place blintzes in buttered 9x13" pan, one inch apart so that blintzes and souffle can be served.
- In blender, combine eggs, sour cream, sugar, and vanilla.
- Pour over blintzes.
- Bake at 350F 40 minutes, until souffle puffs up.
