Mint Choc Chip Fudge Cookies

  1. Line an 8x8 square pan with foil and lightly spray with cooking spray.
  2. Set aside.
  3. In a microwave safe bowl, microwave white chocolate chips and butter on high for 1 minute.
  4. Let rest for 1 minute then check to see if melted.
  5. If needed microwave for another 30-45 seconds.
  6. Stir chocolate until all lumps are gone.
  7. Stir in sweetened condensed milk and mint extract.
  8. Add food coloring to desired color.
  9. Once completely incorporated, let cool for a few minutes then fold in 1/2 cup mini chocolate chips.
  10. Press fudge into prepared pan.
  11. Sprinkle remaining mini chocolate chips on top and gently press into fudge.
  12. Refrigerate for a minimum of 2 hours to set before cutting into squares.
  13. Store in an airtight container
