Sausage Apple Stuffed Squash Recipe
- 3 acorn squash, halved and seeded
- 1 1/2 pound pork sausage meat
- 3/4 c. oatmeal
- 1/2 teaspoon salt
- 1/2 c. minced apple
- 1/4 c. minced onion
- 1 tbsp. finely minced parsley
- 1/2 c. lowfat milk
- Place squash, cut side down, in a shallow baking pan.
- Pour a little water in pan.
- Bake in preheated 350 degree oven about 30 min.
- While squash is baking, make sausage balls.
- Combine rest of ingredients.
- Shape into about 18 balls.
- Brown lightly in a skillet.
- Remove squash from oven; turn cut side up.
- Season with salt and pepper.
- Place 3 balls in center of each squash.
- Bake 40 min longer till squash is tender.
