Tarragon Chicken
- 2 boneless, skinless chicken breasts
- 1 tbsp. dried tarragon
- 1 can (10-3/4) soup
- 1/2 cup milk
- 3/4 cup frozen broccoli florrets
- 10 to 12 salted cashews, coarsely chopped
- 3 tbsp. very coarsely chopped leeks
- Salt and Pepper to taste
- Preheat oven to 350F.
- Cook chicken over medium-high heat until both sides are just starting to brown, but are not cooked inside.
- While the chicken is cooking mix all of the ingredients together in a pie plate or bread pan.
- Add the chicken and make sure that it is covered in the sauce.
- Cook for approximately 25 minutes until the chicken is cooked through.
- Is good with wild rice on the side.
