15-Minute Frozen Strawberry Mousse Pie

  1. Process cookies in a food processor until fine crumbs form.
  2. Transfer to a medium bowl.
  3. Wipe out processor with a paper towel.
  4. In food processor, puree half the berries, the sugar and corn syrup.
  5. Add remaining berries and pulse until coarsely chopped.
  6. Remove and refrigerate 1/2 cup for topping.
  7. Beat cream with electric mixer on high speed until stiff peaks form when beaters are lifted, 2 to 3 minutes.
  8. Fold 1 cup whipped cream into cookie crumbs.
  9. Spread in pie shell.
  10. Fold remaining berry mixture into remaining cream until blended.
  11. Spoon onto cookie mixture, mounding in center.
  12. Freeze at least 4 hours until very firm.
  13. Cover tightly with plastic wrap and store in freezer up to 1 week.
